"Piece of Cake" Pumpkin Cookies

The Friend (a magazine for children published by The Church of Jesus Christ of Latter-day Saints), called these "Autumn Surprise" cookies, but I have renamed them "Piece of Cake" because they are, quite literally a piece of cake.


Ingredients:
  • 1 box spice cake mix
  • 1 15-ounce can of pumpkin
  • 1 bag chocolate chips
Directions:
Preheat oven to 325F. Grease cookie sheet or use parchment paper. Mix cake mix, pumpkin, and chocolate chips until blended. Spoon onto to cookie sheet and bake for 20 minutes.

Black Bean, Ranch, and Avocado Quesadillas

Ingredients (per quesadilla):
  • 10-inch flour tortilla
  • 1 tbs veg. oil
  • dash of salt
  • generous handful of cheddar or mexi-blend cheese
  • generous handful of cooked black beans
  • Ranch dressing
  • Fresh avocado, sliced
Directions:
Preheat oil in skillet over medium heat, spreading evenly over pan. Add tortilla, allowing one side to absorb oil (you can also brush oil directly onto tortilla). Sprinkle oil side with a dash of salt and replace in skillet oil side down. Add cheese, beans, and a squirt or two of Ranch dressing to one half of tortilla. Fold over and cook on both sides until golden. Remove from heat. Add avocado slices to the inside of the quesadilla. Cut in half and enjoy.

Turkey Mango Cheddar Wraps

I came up with this surprisingly tasty concoction when I ran out of lettuce but wanted a wrap.

Ingredients (per wrap):
  • 1 spinach tortilla wrap
  • a few slices of thin sliced oven roasted turkey deli meat
  • 1/2 mango, cut into bite-sized pieces
  • large handful of red grapes, quartered
  • 1-2 generous handfuls of shredded cheddar cheese (a blend of cheddar and mozzarella also works well)
  • a couple tbsp of T. Marzetti Lite Classic Ranch (seriously the best Ranch I have ever bought; available in the produce section of most grocery stores)
Directions:
Mix all ingredients into wrap, working the ranch throughout. Fold in the ends and roll up burrito style. Cut in half. Enjoy.

Homemade Oreos

2 Devils Food Cake mixes
1 1/4 C Butter
4 eggs
1 tsp vanilla

Directions: Mix well. Roll into cherry sized balls. Place on an ungreased cookie sheet. Bake at 350 degrees for 9-11 minutes.

Cream Cheese Filling
(1) 8 oz pkg cream cheese
1/4 C butter
1 tsp vanilla
3 1/2 C Powdered Sugar.

Mix well and spread between cooled cookies

Crock Pot Chicken Enchiladas

Super easy and tasty!

Ingredients:
  • 2-3 lbs skinless, boneless chicken breast
  • 1 28-oz can green enchilada sauce
  • 1 can green chilies (optional)
  • 1-2 cups shredded cheddar cheese
  • 10-12 corn tortillas
Directions:

Cook chicken in crock pot with enchilada sauce and chilies until done (about 4-5 hours on low). Shred chicken in crock pot. Mix in a handful or two of cheese and 4-5 tortillas (allow the tortillas to break; the tortillas will dissolve and thicken the sauce). Lay remaining tortillas on top of chicken mixture, overlapping to cover chicken mixture completely. Sprinkle remaining cheese on top. Cover crock pot and continue to cook on low until cheese is melted. Serve with rice, beans, sour cream, and/or chips and salsa.

Hawaiian Haystacks

Ingredients:
  • rice, steamed or boiled
  • condensed cream of chicken soup
  • approx. 1 lb chicken breast (fresh or frozen)
  • celery, chopped
  • carrots, grated
  • pineapple, crushed
  • cheddar cheese, grated
  • Chinese noodles
  • green onions (I'd don't usually use them, but some people like them)
Directions:
Cook chicken and soup (do not add water) in crock pot until done. Shred chicken. Serve with remaining ingredients over rice. Enjoy.

Becca's Fruit Salad

A super easy Thanksgiving Tradition. Precise measurements are not required!

Ingredients:
  • 1 fresh pineapple*
  • 2-3 clementines
  • 2-3 medium bananas
  • 1 medium apple
  • 1 can fruit coctail
  • 2-3 scoops Cool Whip

Directions:

Peel and cut fruit to bite-sized pieces (I do not peel the apple). Allow juice from pineapple to mix with bananas and apples to keep them from browning. Stir in Cool Whip. Store in fridge.

*I use 1/2 to 3/4 of the pineapple, and set the rest out for those who like enjoy the fresh pineapple on its own.
